In an effort to elevate his childhood favorite foods at the recently opened three-star bar near the Pearl, Chef Josh Calderon has unleashed a monster. His Fried Mortadella Sandwich ($ 12) is a daddy’s flexible, yet tender, culinary steroid bologna sandwich (because, you know, that’s about all he could cook.)
I ate this sandwich twice in the last week and can’t promise it won’t happen again in the next few days. It’s indulgent without being pretentious, delivering a tasty top-down experience that makes for a perfect lunch or late-night bar snack.
